This shallot flavored butter goes great on broiled or grilled fish and meats or on omelets. The recipe originally came from one of my mother’s recipe files.

Ingredients
- 1/2 cup (1 stick) butter, softened
- 4 teaspoons finely chopped shallots
- 1 cup dry white wine
- - salt and white pepper to taste
- 1 tablespoon finely chopped parsley
How To Make shallot butter

Step 1Combine shallots and wine in a saucepan and simmer until wine is reduced to 1/4 cup.

Step 2Cream butter with a fork in a bowl. Gradually stir in shallot wine, parsley, and salt and white pepper to taste.
