This shallot flavored butter goes great on broiled or grilled fish and meats or on omelets. The recipe originally came from one of my mother’s recipe files.

Makes 1/2 cup

  • 1/2 c
    (1 stick) butter, softened
  • 4 tsp
    finely chopped shallots
  • 1 c
    dry white wine
  • ·
    salt and white pepper to taste
  • 1 Tbsp
    finely chopped parsley

How to Make Shallot Butter


  1. Combine shallots and wine in a saucepan and simmer until wine is reduced to 1/4 cup.
  2. Cream butter with a fork in a bowl. Gradually stir in shallot wine, parsley, and salt and white pepper to taste.
