I grew up on apple butter and love it. I came across this recipe for pumpkin butter and it's just as scrumptious and so easy to make! I tweaked it a little to make it my own. I have it on toasted English Muffins and biscuits.

Ingredients

  • 2 (15-oz) cans pumpkin (not pie filling)
  • 2 teaspoons vanilla
  • 3/4 cup apple cider or apple juice
  • 1-1/4 cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons pumpkin pie spice
  • 2 tablespoons butter

How To Make pumpkin butter

  • Step 1
    Mix all ingredients together in a medium saucepan. Mix well.
  • Step 2
    Bring mixture to boil, stirring frequently.
  • Step 3
    Reduce heat to low and simmer 25-30 minutes until thickened. Let cool completely. Refrigerate.
