pumpkin butter
I grew up on apple butter and love it. I came across this recipe for pumpkin butter and it's just as scrumptious and so easy to make! I tweaked it a little to make it my own. I have it on toasted English Muffins and biscuits.

Makes approx 3-3/4 cups
Ingredients
- 2 (15-oz) cans pumpkin (not pie filling)
- 2 teaspoons vanilla
- 3/4 cup apple cider or apple juice
- 1-1/4 cup packed brown sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons pumpkin pie spice
- 2 tablespoons butter
How To Make pumpkin butter

Step 1Mix all ingredients together in a medium saucepan. Mix well.

Step 2Bring mixture to boil, stirring frequently.

Step 3Reduce heat to low and simmer 25-30 minutes until thickened. Let cool completely. Refrigerate.
