I love using my roots as a way to put flavors together, this is a great Mediterranean combo of flavors and a quick twist on the the typical bruschetta. Makes a great appetizer or snack especially in the spring and summer months!

Ingredients

  • 1 - loaf of french bread sliced and toasted
  • 250 grams feta cheese crumbled
  • 2 cloves garlic skin peeled
  • 2 tablespoons extra virgin olive oil
  • 1 - zest of a whole lemon
  • 1 tablespoon fresh lemon juice
  • - freshly ground pepper to taste
  • 3 tablespoons fresh chopped dill
  • 2 tablespoons fresh chopped chives
  • - cherry tomatoes sliced in half for garnish

How To Make mediterranean bruschetta

  • Step 1
    Place the feta, oil, garlic, zest and pepper in a food processor. Process until smooth. Stir in dill and chives. Spread on toasted french bread slices and top with sliced cherry tomatoes.
  • Step 2
    Also a great spread for sandwiches, turkey burgers or wraps and served with crackers.
