I love using my roots as a way to put flavors together, this is a great Mediterranean combo of flavors and a quick twist on the the typical bruschetta. Makes a great appetizer or snack especially in the spring and summer months!

Ingredients

loaf of french bread sliced and toasted
250 g
feta cheese crumbled
2 clove
garlic skin peeled
2 Tbsp
extra virgin olive oil
1
zest of a whole lemon
1 Tbsp
fresh lemon juice
freshly ground pepper to taste
3 Tbsp
fresh chopped dill
2 Tbsp
fresh chopped chives
cherry tomatoes sliced in half for garnish

How to Make Mediterranean Bruschetta

Step-by-Step

  • 1Place the feta, oil, garlic, zest and pepper in a food processor. Process until smooth. Stir in dill and chives. Spread on toasted french bread slices and top with sliced cherry tomatoes.
  • 2Also a great spread for sandwiches, turkey burgers or wraps and served with crackers.
