low country pimento cheese spread

A friend of mine's mother used to spread this into celery sticks for a snack whenever I came over after school. I loved it!! It is nice as a sandwich spread, too. Or on small pieces of rye as a canape!

Ingredients For low country pimento cheese spread

  • 8 oz
    sharp cheddar, grated - not the shredded in a bag kind!
  • 2 oz
    cream cheese, lite is ok
  • 1/2 c
    roasted red pepper, finely diced
  • 3 Tbsp
    mayonnaise, lite is ok
  • 1/4-1/2 tsp
    hot sauce
  • salt and pepper, to taste

How To Make low country pimento cheese spread

  • 1
    Finely grate the cheddar cheese yourself. (The kind that comes already shredded in the bag has stuff added to make it non-stick. You don't want that kind!)

    Blend together all the ingredients with the grated cheddar. It's ok if you can still see little pieces of cheese or pepper.

    Refrigerate leftovers in a covered bowl.
