low country pimento cheese spread
A friend of mine's mother used to spread this into celery sticks for a snack whenever I came over after school. I loved it!! It is nice as a sandwich spread, too. Or on small pieces of rye as a canape!

Ingredients
- 8 ounces sharp cheddar, grated - not the shredded in a bag kind!
- 2 ounces cream cheese, lite is ok
- 1/2 cup roasted red pepper, finely diced
- 3 tablespoons mayonnaise, lite is ok
- 1/4-1/2 teaspoon hot sauce
- salt and pepper, to taste
How To Make low country pimento cheese spread

Step 1Finely grate the cheddar cheese yourself. (The kind that comes already shredded in the bag has stuff added to make it non-stick. You don't want that kind!)

Step 2Blend together all the ingredients with the grated cheddar. It's ok if you can still see little pieces of cheese or pepper.

Step 3Refrigerate leftovers in a covered bowl.
