A few years ago, while on a speaking tour through Maryland, I stumbled upon a small mom-and-pop restaurant. Great burgers, delicious fries; quite a unique condiment that had a spicy piquant flavor. Long story short, I made my own. It is great on burgers, and fries, but works in many other areas (fish, chicken, pork). Have fun experimenting with it in different recipes. So, you ready… Let’s get into the kitchen.

How To Make condiment essentials: booted up mayonnaise

  • Step 1
    PREP/PREPARE
  • Step 2
I usually start by making a mayonnaise emulsion; however, to save time, we will just use jarred mayo. If you can get your hands on a jar of Duke’s mayonnaise, do so… yummy stuff.
  • Step 3
If you do not have any buttermilk powder, no worries. I like the subtle tang it gives the sauce, but I would not consider it a deal breaker.
  • Step 4
If you enjoy the flavor of Worcestershire, but do not like the fact that it is made with anchovies, then you might want to try my homemade version. https://www.justapinch.com/recipes/sauce-spread/other-sauce-spread/diy-essentials-homemade-worcestershire-sauce.html?r=1
  • Step 5
If you are making this with store-bought mayonnaise, it should last you about two weeks. If you are making it with homemade mayonnaise (no preservatives), then storage time would be 7 – 8 days. So, only make as much as you think you will use in the allotted time.
  • Step 6
Gather your ingredients (mise en place).
  • Step 7
Add the ingredients to a bowl.
  • Step 8
    Whisk together.
  • So yummy
    Step 9
Store in a jar, with a tight-fitting lid, in the fridge.
  • Step 10
    PLATE/PRESENT
  • So yummy
    Step 11
It is a condiment, so use it as such. Enjoy.

    Step 12
Keep the faith, and keep cooking.
