condiment essentials: booted up mayonnaise
A few years ago, while on a speaking tour through Maryland, I stumbled upon a small mom-and-pop restaurant. Great burgers, delicious fries; quite a unique condiment that had a spicy piquant flavor. Long story short, I made my own. It is great on burgers, and fries, but works in many other areas (fish, chicken, pork). Have fun experimenting with it in different recipes. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 1 cup mayonnaise, plain variety
- 2 tablespoons ketchup, homemade, if possible
- 2 tablespoons tomato sauce
- 1 tablespoon smooth brown mustard, like grey poupon
- 1 teaspoon dehydrated onions, crushed to a powder
- 1 teaspoon sweet paprika
- 1 teaspoon worcestershire sauce
- 1 teaspoon lemon juice, freshly squeezed
- 1/2 teaspoon prepared horseradish, not horseradish sauce
- 1/4 teaspoon garlic powder
- OPTIONAL ITEMS
- - buttermilk powder

Step 2I usually start by making a mayonnaise emulsion; however, to save time, we will just use jarred mayo. If you can get your hands on a jar of Duke’s mayonnaise, do so… yummy stuff.

Step 3If you do not have any buttermilk powder, no worries. I like the subtle tang it gives the sauce, but I would not consider it a deal breaker.

Step 5If you are making this with store-bought mayonnaise, it should last you about two weeks. If you are making it with homemade mayonnaise (no preservatives), then storage time would be 7 – 8 days. So, only make as much as you think you will use in the allotted time.

Step 9Store in a jar, with a tight-fitting lid, in the fridge.
