betty's sweet strawberry butter

A sweet strawberry butter perfect for pancakes, waffles, sweet breakfast rolls or breads, English muffins, crumpets (my favourite), cinnamon or fruit toast or scones. Use firm berries (they give the best result). Will keep for up to 4 days in the fridge (covered) and can be made ahead. This is a great recipe for a "special breakfast" (think mothers or father's day, festive holidays etc) or when strawberries are in season and in abundance.

Ingredients For betty's sweet strawberry butter

  • 1 c
    chopped washed and hulled strawberries (fresh are best but frozen will work)
  • 1 c
    sweet (unsalted) butter
  • 1 c
    powdered sugar
  • 2 tsp
    vanilla
  • a pinch
    of ground cinnamon, optional

How To Make betty's sweet strawberry butter

    Place all the ingredients in a blender or food processor and blitz until smooth.

    Refrigerate (covered) for up to 4 days.
