This one is totally down and dirty… As, I suppose, most dry spice recipes probably are. It has a lot of great flavor, a bit of kick, and I tweaked it to work well with pork. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 2 tablespoons coconut or palm sugar
  • 1 tablespoon dehydrated onions, ground to a powder
  • 2 teaspoons white pepper, freshly ground
  • 2 teaspoons ancho chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt, kosher variety, fine grind
  • 1 teaspoon ground fennel
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cacao powder
  • 1/2 teaspoon ground cinnamon
  • 1 - 2 pinches cayenne pepper, or to taste
