spice essentials: spicy awesome dill shake

I love the taste of a good dill pickle, the snap, the tang… that sour tastes that hits you on the sides and back of your tongue… yum. I wanted the ability to duplicate that taste on other things like veggies, chicken, fish… The lot I could not really get what I was after until I added one obvious ingredient. Vinegar powder… This stuff is awesome. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • WHOLE SPICES
  • 2 tablespoons coriander seeds
  • 2 teaspoons celery seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon fennel seeds
  • PREGROUND SPICES
  • 3 tablespoons powdered vinegar
  • 2 tablespoons dried dill weed
  • 1 tablespoon salt, kosher variety, fine grind
  • 1/2 teaspoon mustard powder, i prefer coleman’s
  • 1/2 teaspoon garlic powder

How To Make spice essentials: spicy awesome dill shake

    PREP/PREPARE
  • Step 2
    To make this recipe you need a spice grinder, good blender, or a mortar & pestle. In addition, you will need a skillet, to toast the spices, and a container like an old glass spice bottle.
  • Step 3
    If stored correctly (good container, tight-fitting lid, cool, dark place), this spice should last 8 – 10 months, or longer.
  • Step 4
    I have discovered my new best friend… Powdered Vinegar. Hard to find in some stores but easy/peasy on Amazon, it give dishes, and spice mixes a tang that you cannot get any other way.
  • Step 5
    Gather your ingredients (mise en place).
  • Step 6
    Add the whole spices to a skillet over medium-high heat.
  • Step 7
    Toss until fragrant and beginning to brown, about 2 – 3 minutes.
  • Step 8
    Do NOT let them burn.
  • Step 9
    Grind, while still warm, using a spice grinder, good blender, or a mortar & pestle.

    Add all the ingredients together, in a small bowl.

    Whisk to combine
  • Step 12
    Place in a sealed container, in a cool/dark place, until needed.

    If you use the proportions listed in this recipe, it will be enough to fill an old glass spice jar... Perfect.

    Sprinkle on things like fish, chicken, and or veggies. I used it to make some homemade, oven-baked dill chips and they were awesome. Enjoy.
