spice essentials: savory seafood seasoning
If I were to compare this seasoning with something on the market, I would say: Old Bay Seasoning. It is similar to, but not quite the same as that famous spice. I wanted something with a bit more “earthier” flavor notes, and not quite so salty. This is what I came up with. So, you ready… Let’s get into the kitchen.

- 1 tablespoon bay leaf powder
- 1 tablespoon celery salt
- 1 teaspoon dill powder
- 1/4 teaspoon smoked paprika
- 1/8 teaspoon black pepper, freshly ground
- 1/8 teaspoon white pepper, freshly ground
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon ground dry mustard
- 1 pinch ground allspice
- 1 pinch ground ginger
- 1 pinch ground cardamom
- 1 pinch ground cinnamon
- 1 pinch ground mace

Step 2To make the bay leaf, and dill powder, put 2 – 3 dried bay leaves, and teaspoon of dill seed into a spice blender, and mix until the ingredients are a powder.

Step 4Add all the ingredients to a bowl.

Step 5Mix until combined, place into a glass jar with a tight-fitting lid, and store in a cool/dry place until needed.
