If I were to compare this seasoning with something on the market, I would say: Old Bay Seasoning. It is similar to, but not quite the same as that famous spice. I wanted something with a bit more “earthier” flavor notes, and not quite so salty. This is what I came up with. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1 tablespoon bay leaf powder
  • 1 tablespoon celery salt
  • 1 teaspoon dill powder
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon black pepper, freshly ground
  • 1/8 teaspoon white pepper, freshly ground
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon ground dry mustard
  • 1 pinch ground allspice
  • 1 pinch ground ginger
  • 1 pinch ground cardamom
  • 1 pinch ground cinnamon
  • 1 pinch ground mace

    PREP/PREPARE
  • Step 2
    To make the bay leaf, and dill powder, put 2 – 3 dried bay leaves, and teaspoon of dill seed into a spice blender, and mix until the ingredients are a powder.

    Gather your Ingredients (mise en place).

    Add all the ingredients to a bowl.

    Mix until combined, place into a glass jar with a tight-fitting lid, and store in a cool/dry place until needed.
