Spice Essentials: Jamaican Seasoning with a Twist

This particular spice is known for its tremendous heat, and while I do like a nice hot Jamaican seasoning, I toned this one down a bit. It still has those distinctive flavor notes of the islands; however, it won’t blow the top of your head off.

The coconut sugar adds a distinctive sweet taste; while the bouillon powder adds a bit of sour/salt to the mix. In addition, the powdered shitake mushrooms create another level of flavor, not usually found in a typical jerk seasoning.

So, you ready… Let’s get into the kitchen.

  • 1 Tbsp
    bacon powder
  • 1 Tbsp
    powered shitake mushrooms
  • 1 Tbsp
    coconut sugar
  • 1/2 Tbsp
    chicken bouillon powder
  • 1 tsp
    onion powder
  • 1 tsp
    dried parsley
  • 1 tsp
    garlic powder
  • 1 tsp
    white pepper, freshly ground
  • 1 tsp
    smoked hungarian paprika
  • 1 tsp
    ground allspice
  • 1 Tbsp
    ground ginger
  • 1 tsp
  • 1 tsp
    ground mustard
  • 1/2 tsp
    cayenne pepper, or to taste
  • 1/2 tsp
    dried crushed red pepper flakes
  • 1/2 tsp
    freshly ground nutmeg
  • 1/4 tsp
    ground cinnamon
  • 1/4 tsp
    espresso powder

How to Make Spice Essentials: Jamaican Seasoning with a Twist


  2. Gather your ingredients (mise en place).
  3. Add all the ingredients to a small mixing bowl.
  4. Whisk until thoroughly combined.
  5. Place in a tightly capped glass jar, and keep out of the sun, and heat.
  6. Chef’s Note: The spice should last 6 months, or more. Enjoy.
  7. Keep the faith, and keep cooking.
