This particular spice is known for its tremendous heat, and while I do like a nice hot Jamaican seasoning, I toned this one down a bit. It still has those distinctive flavor notes of the islands; however, it won’t blow the top of your head off. The coconut sugar adds a distinctive sweet taste; while the bouillon powder adds a bit of sour/salt to the mix. In addition, the powdered shitake mushrooms create another level of flavor, not usually found in a typical jerk seasoning. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1 tablespoon bacon powder
  • 1 tablespoon powered shitake mushrooms
  • 1 tablespoon coconut sugar
  • 1/2 tablespoon chicken bouillon powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon white pepper, freshly ground
  • 1 teaspoon smoked hungarian paprika
  • 1 teaspoon ground allspice
  • 1 tablespoon ground ginger
  • 1 teaspoon thyme
  • 1 teaspoon ground mustard
  • 1/2 teaspoon cayenne pepper, or to taste
  • 1/2 teaspoon dried crushed red pepper flakes
  • 1/2 teaspoon freshly ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon espresso powder

  • Step 2
    Gather your ingredients (mise en place).

    Add all the ingredients to a small mixing bowl.
  • Step 4
    Whisk until thoroughly combined.
  • Step 5
    Place in a tightly capped glass jar, and keep out of the sun, and heat.
