This is my go to spice for just about anything Creole. I love it on blackened fish, fried/breaded catfish, and it is awesome in a Creole jambalaya. You control the heat by varying the peppers, to your own specific tastes. So, you ready… Let’s get into the kitchen.

- 2 tablespoons paprika, hot or sweet, your choice
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon white pepper, freshly ground
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt, kosher variety
- 1/2 teaspoon black pepper, freshly ground
