I love making my own spices, seasonings, and rubs… Not to mention soup bases and dressings. I know what is in it, and I can fine-tune the ingredients to suit my tastes. You cannot always Do It Yourself; however, when you can, homemade beats out store bought every time. At least in my opinion. This is: Andy’s Kick it up Seasoning. When I was putting this together, I wanted a seasoning that would have a bit of kick, and have some sweet flavor notes. When you taste this, it will hit your flavor buds from the tip of your tongue to the back. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 2 tablespoons paprika, sweet or hot, your choice, i used sweet
  • 1 tablespoon salt, kosher variety, fine grind
  • 1 tablespoon coconut sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder, hot or mild, your choice, i used mild
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon white pepper, freshly ground
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon dry mustard
  • 1 pinch cayenne pepper

    PREP/PREPARE

    Gather your Ingredients (mise en place).
  • Step 3
    Mix all the ingredients together.
  • Step 4
    I gave them a spin in my mini prep; just to make sure everything was blended properly.

    Store in a nice air-tight container.

    Chef’s Note: Now, that was not hard; was it?

    Chef’s Tip: An old spice jar with a shaker top would be the perfect container. As a matter of fact, the amount of spice generated by this recipe will fill one old glass spice jar perfectly.

    Shake over a hot plate of French fries… Use in place of other dry seasonings on your burgers… Sprinkle on the skin of a chicken, before baking… Have fun, experiment. Enjoy.
