seasoning essentials: onion soup cooking base

Lipton onion soup dry mix is used as a base for many a recipe, so I thought I would come up with a version of my own. I have left out two of the ingredients in most copycat recipes, and added two others. The removal of the salt, and sugar gives the base a bit of flexibility; especially in recipes that are already sweet, or salty. And the addition of the cumin, and paprika give it “earthy” flavor-notes that work well in soups, stews and casseroles. Oh, one more thing, I removed the beef bouillon, and lightened it up with chicken bouillon. So, you ready… Let's get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1/2 cup dehydrated chopped onions
  • 2 tablespoons powdered chicken bouillon
  • 2 teaspoons onion powder
  • 1/2 teaspoon celery seed, ground
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper, freshly ground
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon sweet paprika

    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Add all the ingredients to a medium-size bowl.
  • Step 4
    Whisk until combined.
  • Step 5
    Add to a glass jar with a tightly-fitting lid.
  • Step 6
    Chef’s Note: If the recipe calls for 1 packet of Lipton soup mix, use 4 tablespoons of this mix.

    I did not intend this recipe to be something that you make onion soup out of; I intended it to be something you use in a recipe, when that recipe calls for Lipton soup mix. So, use it in soups, stews, casseroles… you get the idea. Enjoy.
