Rub Essentials: Summertime Zesty Dry Pork Rub

Andy Anderson !

This is one of the rubs that I use when grilling, baking, or smoking pork. It has a sweet heat with smoky savor. Plus, the lemon zest adds an almost “Springtime” piquancy.

Fix up a batch, store it in a glass container with a good lid. Store it out of the heat and sun, and it will last you six months… just in time for the upcoming grilling/smoking season.

So, you ready… Let’s get into the kitchen.

How to Make Rub Essentials: Summertime Zesty Dry Pork Rub

  2. Gather your Ingredients (mise en place).
  3. Chef’s Note: Place the lemon peel, and the dehydrated onions into a spice grinder, or use a mortar and pestle, to grind them into an even consistency with the rest of the ground spices.
  4. Place all the ingredients into an airtight glass container, and keep out of direct sunlight, and heat.
  6. With just the right amount of heat, the right amount of sweet, and the right amount of piquancy, this is my go to pork rub for grilling, baking, or smoking pork in the Summertime.
  7. Keep the faith, and keep cooking.
