I love creating my own spice mixes; not only does it give you control over the ingredients, and keeps out the chemicals and preservatives, in addition you can tweak it to fit your individual tastes. Recipes for Old Bay include most of the same ingredients… It is the proportions that make each mix unique. This is my unique mix. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • SPICES THAT REQUIRE GRINDING
  • 1 tablespoon dried bay leaves, finely ground
  • 1 tablespoon celery seeds, ground
  • 1/4 teaspoon red pepper flakes
  • THE REMAINDER OF THE SPICES
  • 1 1/2 teaspoons dry mustard, i prefer coleman’s
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon white pepper, freshly ground
  • 1 teaspoon paprika, smoked variety
  • 1 teaspoon celery salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon nutmeg, freshly grated
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon cayenne pepper, or to taste

How To Make homemade essentials: old bay seasoning mix

    Gather your ingredients (mise en place).

    Grind the top three spices, and then combine them with the others.

    Store in a glass jar in a cool dry place.
