When it comes to Cajun Spice mixes, two names come to mind: Tony Chachere’s, and Slap Ya Mama. If you look at the ingredients in my recipe, and then compare them to the ingredient lists on the two mentioned spices, you will see that it is somewhat of a combination of the two Tony Chachere’s is known for its robust Cajun flavors, while Slap Ya Mama is known for its heat. My goal was to keep the full-bodied flavors of the former and add in some of the heat of the latter. I think I did a pretty good job. So, you ready… Let’s get into the kitchen.

- 1 teaspoon dry mustard
- 1 teaspoon white pepper, freshly ground
- 1 teaspoon black pepper, freshly ground
- 1 teaspoon crushed pepper flakes
- 1 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried greek oregano
- 1 tablespoon chili powder, i prefer hatch
- 1 tablespoon salt, kosher variety, fine grind
- 2 tablespoons hungarian paprika
- 2 tablespoons dehydrated onions
- 2 tablespoons garlic powder

Step 2You will need a spice blender, or just a good blender to make this recipe.

Step 3One other thing about Cajun spices is that they are tremendously high in salt content. I cut the sodium in this recipe by over half; however, if you are on a salt restricted diet, cut it down more, or leave it out entirely. That is the great thing about homemade spice mixes, you are in control of what goes into them.

Step 4Gather your ingredients (mise en place).

Step 5Add all the ingredients to a blender, and grind away until mixed and fine, then place in a sealed container, and store in a cool place, away from direct sunlight.

Step 6Chef’s Tip: Save your old spice bottles. They are excellent for storing your homemade spices.

Step 8Use anywhere you would use Cajun spice: vegetables, fish, meat, poultry; some people sprinkle it fruit. Enjoy.
