baking essentials: cheez-it breadcrumbs
I like Cheez-It crackers. I make my own, and sometimes bring a bowl into the studio to nosh on while I am working. This recipe; however, is not for crackers, it is for making breadcrumbs, and used for kicking up the flavor of breaded chicken, pork, beef; even seafood. i am shy on photos; however, I made these last evening, and did not decide to publish until the last few steps... My Bad. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1 cup flour, all-purpose variety
- 1/2 teaspoon dried turmeric
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt, kosher variety, fine grind
- 1/2 teaspoon white pepper, freshly ground
- 1/2 teaspoon cayenne pepper
- 3 cups sharp cheddar cheese, freshly shredded
- 1 cup parmesan cheese, freshly grated
- 1/4 cup sweet butter, unsalted, room temperature
- 2 large eggs, lightly whipped

Step 1PREP/PREPARE

Step 2You will need a food processor or mini prep to make this recipe.

Step 3If you want to make these into crackers, then reduce all the dry spices from 1/2 to 1/4 teaspoons each.

Step 4Gather your ingredients (mise en place).

Step 5Place a rack in the middle position and preheat the oven to 350f (175c).

Step 6Add the dry ingredients to a food processor and give it a few pulses to combine.

Step 7Add about a quarter of the eggs, cheese, and butter, then give a few pulses.

Step 8Repeat until all the ingredients are combined, and the dough forms into a cohesive ball.

Step 9Add a sheet of parchment paper to a baking sheet and spread the dough evenly across the bottom of the sheet.

Step 10Toss into the preheated oven and bake for about 10 – 12 minutes.

Step 11If you are making these into cracker, then remove them from the oven, cut into squares, and continue with the next step.

Step 12Lower the temperature to 325f (165c) and bake for another 10 minutes.

Step 13Remove from the oven and allow to cool. They should be crisp and dry.

Step 14Break up and toss into a food processor.

Step 15Pulse until they resemble breadcrumbs.

Step 16Throw into a Ziploc freezer bag and place in the freezer until ready to use.
