softened butter with olive oil
We use this in place of those expensive butters. I like that it softens up so quickly, and that it contains olive oil. I usually double this recipe to make a large tub. Remove from refrigerator for a few minutes prior to buttering toast or for anything really soft. You can add honey to this to make a really nice honey butter. Works great on English Muffins.
