mint pesto
My mint is growing fast this year. So I made this pesto. It's so refreshing. I like to serve it with Roasted leg of lamb. 5/6/14.

Ingredients
- 1/2 pound fresh mint packed
- 1 cup parsley
- 1 cup baby spinach packed
- 2/3 cup walnuts
- 4 cloves garlic
- 1 cup olive oil
- 1 cup lime juice
- 2 tablespoons sugar
How To Make mint pesto

Step 1Combine mint,parsley,spinach,walnuts,and garlic in the bowl of a food processor fited with a metal blade.

Step 2Process to a paste.

Step 3Gradually add olive oil through feed tube and process until smooth.

Step 4Add lime juice and sugar. Process to combine.
