My mint is growing fast this year. So I made this pesto. It's so refreshing. I like to serve it with Roasted leg of lamb. 5/6/14.

Ingredients

1/2 lb
fresh mint packed
1 c
parsley
1 c
baby spinach packed
2/3 c
walnuts
4 clove
garlic
1 c
olive oil
1 c
lime juice
2 Tbsp
sugar

How to Make Mint Pesto

Step-by-Step

  • 1Combine mint,parsley,spinach,walnuts,and garlic in the bowl of a food processor fited with a metal blade.
  • 2Process to a paste.
  • 3Gradually add olive oil through feed tube and process until smooth.
  • 4Add lime juice and sugar. Process to combine.
