My mint is growing fast this year. So I made this pesto. It's so refreshing. I like to serve it with Roasted leg of lamb. 5/6/14.

Food Processor


  • 1/2 lb
    fresh mint packed
  • 1 c
  • 1 c
    baby spinach packed
  • 2/3 c
  • 4 clove
  • 1 c
    olive oil
  • 1 c
    lime juice
  • 2 Tbsp

How to Make Mint Pesto


  1. Combine mint,parsley,spinach,walnuts,and garlic in the bowl of a food processor fited with a metal blade.
  2. Process to a paste.
  3. Gradually add olive oil through feed tube and process until smooth.
  4. Add lime juice and sugar. Process to combine.
