Ingredients

1 smallorange
-
1 mediumlemon

1 clovegarlic
-
1/2 lb(2 sticks) butter, softened
-
1/2 tspblack pepper
-
1/8 tspsalt
-
1/2 tsptarragon
-
1 tspsoy sauce
How to Make Citrus Butter
- Grate the top layer (colored part only) of orange and lemon rind. Chop rind and garlic very fine. Squeeze juice from the fruit and set aside.
- Cream butter in mixer, adding garlic, rind and spices. Add soy sauce and reserved juice. Whip until thoroughly blended.
*Note: Extra citrus butter may be frozen
