citrus butter
This is a butter that is made at a Texas Landmark for comfort food. They put this on an aged Certified Angus Steak. It's great! Thanks for sharing, Threadgill's.

Ingredients
- 1 small orange
- 1 medium lemon
- 1 clove garlic
- 1/2 pound (2 sticks) butter, softened
- 1/2 teaspoon black pepper
- 1/8 teaspoon salt
- 1/2 teaspoon tarragon
- 1 teaspoon soy sauce
How To Make citrus butter

Step 1Grate the top layer (colored part only) of orange and lemon rind. Chop rind and garlic very fine. Squeeze juice from the fruit and set aside.

Step 2Cream butter in mixer, adding garlic, rind and spices. Add soy sauce and reserved juice. Whip until thoroughly blended. *Note: Extra citrus butter may be frozen
