uncle jack's cucumber relish
Often just called 'pickle' by my family, we always had this in the fridge when I was growing up. It's a great alternative to the standard green sweet relish, and just as versatile! Hope you like it!

Ingredients
- 8 cups cucumbers, diced
- 3 cups onions, diced
- 1/2 cup green pepper, diced
- 1/3 cup salt
- 3 cups sugar
- 4 cups white vinegar
- 1 tablespoon mustard seed
- 1 tablespoon celery seed
- 1/4 teaspoon ground cloves
- 1 teaspoon tumeric
- 1/2 teaspoon ground black pepper
- 2 tablespoons mixed pickling spice in cheesecloth
- 1/3 cup pickling salt
How To Make uncle jack's cucumber relish

Step 1Place diced cucumbers, onions and peppers in a large pot. Sprinkle with the Pickling salt and cover with cold water.

Step 2Let stand overnight, then drain and rinse

Step 3Add all other ingredients, bring to a boil, and simmer for 20 minutes

Step 4Fill sterilized pint jars and seal.
