Often just called 'pickle' by my family, we always had this in the fridge when I was growing up. It's a great alternative to the standard green sweet relish, and just as versatile! Hope you like it!

cucumbers, diced
3 c
onions, diced
1/2 c
green pepper, diced
1/3 c

4 c
white vinegar
1 Tbsp
mustard seed
1 Tbsp
celery seed
1/4 tsp
ground cloves
1 tsp
1/2 tsp
ground black pepper
2 Tbsp
mixed pickling spice in cheesecloth
1/3 c
pickling salt

How to Make Uncle Jack's Cucumber Relish


  • 1Place diced cucumbers, onions and peppers in a large pot. Sprinkle with the Pickling salt and cover with cold water.
  • 2Let stand overnight, then drain and rinse
  • 3Add all other ingredients, bring to a boil, and simmer for 20 minutes
  • 4Fill sterilized pint jars and seal.
