pam's fresh, sweet cherry relish
I found this recipe online and thought it sounded like an excellent accompaniment for simply grilled chicken or pork. I brine the meats in a salt, sugar, basil brine for about 1/2 to 1 hour before grilling to enhance their flavor and make them moist and tender. Nice, easy and light Summer dinner with grilled romaine salad with garden ripe tomato slices and light vinaigrette.

Ingredients
- 1 cup pitted and chopped fresh sweet cherries, bing, rainier, etc.
- 1/2 cup jicama, finely chopped
- 1 medium green onion/scallion, finely sliced, both white and green parts
- 1 teaspoon mint, freshly finely chopped
- 1/2 to 1 teaspoons wine vinegar or seasoned rice vinegar
- 1 pinch cayenne pepper or to taste
- 1 pinch kosher salt and freshly ground black pepper

Step 1Mix all of the ingredients in a medium bowl, and refrigerate until needed to let flavors meld.

Step 2Serve cool or at room temp over or along side of grilled chicken, or fried or grilled pork tenders.
