I make lots of different salsa. This one is great with chips, but can also be tossed with pasta and grilled chicken, or even as a sauce for grilled steaks.

Ingredients

  • 1 pound tomatillos, husks removed
  • 1 - onion, halved
  • 3 - jalapenos, halved
  • 1 - tomatoe, halved
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 bunch fresh cilantro

How To Make easy roasted green salsa (salsa verde)

  • Step 1
    Preheat broiler.
  • Step 2
    Place tomatillos, onion, peppers and tomato on a baking sheet. Drizzel olive oil over the vegetables and season with salt and pepper.
  • Step 3
    Place under broiler. Cook vegetables until tender and outer skin chars (about 30 minutess).
  • Step 4
    Remove skin from tomatoes. Place all vegetables in food processor, leaving out most juice that collects during broiling.
  • Step 5
    Roughly chop cilantro and add to processor. Process until smooth. Season with salt, if needed. Eat hot or cooled.
