roasted red pepper sauce

TODAY WAS A VERY EXHAUSTING DAY FOR ME SOOOO I TOOK OUT A BAG OF FROZEN ROASTED PEPPERS N MADE THIS DELICIOUS SAUCE.....I PUT MINE ON RAVIOLI BUT IT CAN B USED ON ANY KIND OF PASTA OR ON A PIECE OF GRILLED CHICKEN :)

yield ENOUGH FOR 1 LB OF PASTA

Ingredients

  • 1 1/2 cups roasted red peppers
  • 2 tablespoons onion, finely choppd
  • 1 clove garlic, minced ( i used roastd garlic)
  • 1/2 cup chickn broth
  • 1/4 cup lite cream
  • 1/4 cup parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon blk pepper
  • 1/4 teaspoon crushd red pepper, optional
  • 1 teaspoon basil pesto...( i had frozen ) or just chop some basil
  • 1 tablespoon olive oil

How To Make roasted red pepper sauce

  • Step 1
    IN A MED/LARGE PAN ADD OLIVE OIL N ONION N GARLIC ...SAUTÉ TILL TENDER. ADD ROASTED PEPPERS.
  • Step 2
    BREAK DOWN PEPPERS N ONIONS N GARLIC USING A STICK BLENDER ...OR TRANSFER MIXTURE TO REG BLENDER N BLEND THEN POUR BAK INTO PAN ;)
  • Step 3
    NEXT POUR CHICKEN BROTH INTO MIXTURE ADD SALT N PEPPER .....N CRUSHD RED PEPPER FLAKES IF USING N STIR.
  • Step 4
    ADD CREAM N STIR
  • Step 5
    ADD PESTO ( OR CHOPPD BASIL) n PARM CHEESE, STIR N WARM THRU ON LOW HEAT....ENJOY.... I SERVED MINE ON RAVIOLI :)
