How to Make Roasted Garlic Arugula Pesto
- Place garlic cloves in one teaspoon of olive oil and roast on medium until brown.
- Add all ingredients to food processor including roasted garlic and its oil. Blend until smooth. You may need more oil if necessary.
- Taste for salt and pepper and adjust. Serve over warm crostini as an appetizer or drizzled over steamed artichokes as a side dish. Tonight I am adding it to an artichoke and mushroom pasta dish.
