roasted garlic arugula pesto

I love arugula on a sandwich and a salad. I also love pesto. I just recently got some arugula at a good price so I decided to make a pesto. It's great on a warm pasta with a delicious peppery taste.

Ingredients

  • 5 ounces arugula
  • 1 medium lemon, juiced
  • 6 cloves garlic
  • 6 teaspoons olive oil, extra virgin
  • 1/4 cup parmesan cheese
  • - salt and pepper to taste
  • 2 tablespoons walnut oil

How To Make roasted garlic arugula pesto

  • Step 1
    Place garlic cloves in one teaspoon of olive oil and roast on medium until brown.
  • Step 2
    Add all ingredients to food processor including roasted garlic and its oil. Blend until smooth. You may need more oil if necessary.
  • Step 3
    Taste for salt and pepper and adjust. Serve over warm crostini as an appetizer or drizzled over steamed artichokes as a side dish. Tonight I am adding it to an artichoke and mushroom pasta dish.
