I kind of fell into this recipe when I was putting up Peach Butter and Jam. I had some peaches that needed to ripen a little longer but when they were ready I just couldn't summon the energy to can such a small amount of them so this is what I came up with. We liked it so much that I have made up more and frozen it for a special treat when the weather is cold and we are longing for warm weather.

How to Make Fresh Peach Pancake topper

Step-by-Step

  1. Peel the skin off one peach. Leave the skin on the other. Slice fruit and through the seed away.
  2. Mash or blend the fruit. Add lemon or orange juice. Add sweetener and spices to taste.
  3. Serve over warm pancakes and enjoy.
