Ingredients
- 1 pound chorizo (mexican sausage, mild or medium ( casings removed )
- 2 - jalapenos, chopped
- 1 small onion, chopped
- 1 can refried beans
- 1/2 teaspoon cumin
- 1/4 teaspoon chili powder
- 1 small can - green chiles - optional
- 1 1/2 cups shredded, cheddar cheese - divided
- green - onions, sliced for top - optional
How To Make ~ refried bean dip ~

Step 1In my iron skillet I crumbled the sausage and fried until cooked through. Remove to a bowl and set aside.

Step 2If not enough fat in skillet add a Tbsp of oil and saute the onions and jalapeno's.

Step 3Once tender crisp, add the meat back to pan and the refried beans, seasonings, green chiles if using, combine well and heat through. If too thick, can add a little water.

Step 4Add 1/2 cup cheddar cheese, seasoning and stir until cheese is melted.

Step 5Spread into a 1 quart oven proof baking dish.

Step 6Top with remaining cheddar cheese and place in oven under broiler until cheese is melted and bubbling. Sprinkle with green onion if desired.

Step 7Serve with favorite tortilla chips or corn chips.
