Ingredients

  • 1 pound chorizo (mexican sausage, mild or medium ( casings removed )
  • 2 - jalapenos, chopped
  • 1 small onion, chopped
  • 1 can refried beans
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1 small can - green chiles - optional
  • 1 1/2 cups shredded, cheddar cheese - divided
  • green - onions, sliced for top - optional

How To Make ~ refried bean dip ~

  • Step 1
    In my iron skillet I crumbled the sausage and fried until cooked through. Remove to a bowl and set aside.
  • Step 2
    If not enough fat in skillet add a Tbsp of oil and saute the onions and jalapeno's.
  • Step 3
    Once tender crisp, add the meat back to pan and the refried beans, seasonings, green chiles if using, combine well and heat through. If too thick, can add a little water.
  • Step 4
    Add 1/2 cup cheddar cheese, seasoning and stir until cheese is melted.
  • Step 5
    Spread into a 1 quart oven proof baking dish.
  • Step 6
    Top with remaining cheddar cheese and place in oven under broiler until cheese is melted and bubbling. Sprinkle with green onion if desired.
  • Step 7
    Serve with favorite tortilla chips or corn chips.
