A super-refreshing dip! They key limes and cilantro work so well together. I love to serve and eat this with a spicy hot chip, because the heat from the chip is instantly cooled by the limey-ness (is that even a word?!) of the dip. Very good with regular tortilla chips, and corn chips, too.

Ingredients

  • 16 ounces cream cheese, room temp
  • 1 cup mayonnaise
  • 16 ounces sour cream
  • 1 cup cilantro, chopped
  • 1/2 cup diced scallions
  • 4 - limes
  • 1 tablespoon grated ginger
  • 1 tablespoon cumin
  • 1 tablespoon salt (add more to taste)

How To Make refreshing savory lime dip

  • Step 1
    Bring cream cheese to room temp. Mix cream cheese together with the mayo and sour cream until they are well incorporated (about 4-5 minutes).
  • Step 2
    Fold in the cilantro.
  • Step 3
    Fold in the scallions.
  • Step 4
    Add salt, cumin and ginger. Mix it in manually, or use an electric mixer.
  • Step 5
    Grate the zest of all the limes into the dip and mix. I used a microplane; it makes the zest come out super thin and it is so nice that way so you don't get all that zest stuck in your teeth!
  • Step 6
    Next, juice THREE of the limes into the dip. Mix the dip after each lime juicing.
  • Step 7
    Taste it! add salt if you want.
  • Step 8
    Let chill AT LEAST 3 hours before serving. This is excellent after chilling overnight or for at least 24 hours. The lime flavor is stronger the longer this sits. Enjoy!
