cheddar, bacon & tomato dip

Ingredients
- 2 tablespoons butter
- 1 cup diced canned tomatoes, drained
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/4 cup reduced sodium chicken broth
- 1 tablespoon cornstarch
- 8 ounces white cheddar cheese, grated
- 6 slices cooked bacon, finely chopped
- - assorted vegetables and bread cubes
How To Make cheddar, bacon & tomato dip

Step 1In a large pot over medium-low heat, melt butter and cook the tomatoes and garlic, stirring frequently, for about 5 minutes or until liquid is absorbed. Add oregano and black pepper.

Step 2In a small bowl, stir together chicken broth and cornstarch. Add to tomato mixture and simmer, stirring, about 1 minute.

Step 3Add the white cheddar by handfuls until completely melted. Add cooked bacon and serve warm with vegetables, cut up, or toasted bread cubes, or crackers.
