One day at my market there was a table set up with samples and some cookbooks and I was asked to try this. I thought yech! But I tried it and it's really good. What's even better was when I asked about the price of the books, they were all free! These people were from the California Department of Public Health and were giving away these recipe books to promote good health. I scored.

3 cups seeded and chopped watermelon
1/2 medium onion, chopped
1/2 red bell pepper, chopped
1 tbs seeded and chopped jalapeno pepper
2 tbs chopped freshe cilantro
2 tbs lime juice
1 tsp vegetable oil


1In a medium bowl, mix all ingredients.
2Serve immediately or cover and refrigerate for up to 1 hour to allow flavors to blend.
