A neighbor had a bumper crop of watermelons a few years ago and again this year. I was running out of ideas when BOOM!!! No salsa left for the pork ribs. Until I threw this together, literally, at the last minute. It was a humongous hit and I get asked for this recipe all the time. I like it with pork and chicken hot off the grill. If the watermelon salsa is seriously chilled before serving, nirvana exists.

Ingredients

  • 1 teaspoon grated lime zest
  • 1/4 cup fresh lime juice, 3-4 limes
  • 1 tablespoon sugar
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon freshly whacked black peppercorns
  • 4 cups seeded watermelon diced very fine
  • 1 - cucumber, peeled, seeded and diced
  • 1/2 cup chopped red onion, or more to taste
  • 1-2 - jalapenos, seeded, ribbed and minced
  • 1/8 cup chopped fresh parsley
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon salt or to taste

How To Make watermelon salsa

  • Step 1
    Put the grated lime zest, fresh lime juice, sugar, extra virgin olive oil and the freshly whacked black peppercorns in a large bowl and whisk well. Don't worry about the peppercorns. It's a good way to take out your frustrations of the day and it doesn't add a lot of heat, just spice.
  • Step 2
    Add the watermelon, cucumber, jalapenos and chopped red onion. Stir to combine. Cover and refrigerate until very cold.
  • Step 3
    When ready to serve, add the fresh parsley and cilantro. Taste and add (or don't) salt. If you add the salt too long before serving, the watermelon gets, well, icky.
