Ingredients
- 1 tablespoon olive oil
- 1/4 cup red bell pepper, diced
- 1/4 cup green bell pepper, diced
- 1 small jalapeno, seeded and ribs removed - minced
- 1 large green onion, thinly sliced
- 3 cloves garlic, minced
- 2 1/2 cups fresh corn kernels - approx. 3 ears
- 3 tablespoons rice wine vinegar
- 2 tablespoons fresh lime juice
- 2 tablespoons fresh cilantro, minced
- salt and pepper to taste
How To Make tasty corn relish

Step 1In a small skillet, saute the peppers, jalapeno, green onion and garlic - until tender.

Step 2Add the corn and milk from the corn - cook, stirring occasionally until corn is tender.

Step 3Remove corn mixture from heat and transfer to a bowl. Combine vinegar, lime juice and cilantro and pour over corn mixture.

Step 4Refrigerate until read to use and bring to room temperature for serving.
