There are long and short process for canning of pickles. This one is the short process, and much easier.
servesMakes 8 pints
medium sized cucumbers, cut in 1" chunks
apple cider vinegar
How To Make
Combine cucumber chunks and salt.
Place in a large enamel pot, add boiling water to cover.
Let stand overnight and then drain.
Mix together sugar, vinegar and spices in a big stock pot.
When it comes to a boil add the pickles and return to the boiling point.
Spoon into hot sterilized jars and seal.
