sensational pico de gallo
Delicious and simple! There are three things I have learned in evolving this recipe that make for fantastic Pico: 1) Letting the peppers/onion/garlic marinade in the lime juice longer is KEY to the flavor 2) Chop the ingredients by hand for authentic texture 3) Roma tomatoes and their lower water saturation level keep the flavor from diluting. If you have to use regular tomatoes, drain them before mixing the Pico. The longer this sits the stronger the lime flavor and the suggested timings account for this. Make it right before you serve and enjoy the compliments of your family and friends!!

Ingredients
- 1 - jalapeno peppers - seeded and diced fine
- 1 cup red onion - diced
- 1 clove garlic - pressed/crushed fine
- 2 1/2 cups roma tomatoes - diced
- 1/2 cup lime juice - fresh squeezed
- 1/2 cup cilantro, fresh chopped
- 1 teaspoon salt (or more to taste)
How To Make sensational pico de gallo

Step 1Combine Jalapeno, Onion, Garlic and Lime Juice in a non-reactive bowl and allow to marinade in the refrigerator for 5-10 mins

Step 2Add Tomatoes, Cilantro and Salt

Step 3Mix and let stand another 15 minutes for all flavors to set and serve
