salsa fresca coctail shrimp

I love shrimp cocktail and I usually eat it cold with just cocktail sauce. I recently went to make some and was low on cocktail sauce. I had some fresh salsa that I had recently bought and thought it would go good with the cold shrimp. This can be served with fresh or frozen shrimp. It can also be served hot over spanish rice. Its something thats quick and easy and good if you're just wanting to try something different or not wanting to do much cooking.

Ingredients

  • 25-35 medium cooked frozen shrimp thawed or prepared fresh shrip peeled and devained tail on or off
  • 1 cup cocktail sauce
  • 1 1/2 cups chunky salsa fresca mild
  • 2 dashes hot sauce
  • 1 dash white wine vinegar

How To Make salsa fresca coctail shrimp

  • Step 1
    Mix cocktail sauce and salsa together in a medium bowl. Add hot sauce and vinegar and mix well. Taste mixture to see if you're needing more hot sauce or vinegar for your taste. Toss in the shrimp and make sure its well covered with the sauce. Cover bowl and refrigerate over night or for at least 4 hours. The longer it marinates the more flavor the shrimp will have. Put shrimp in serving bowls with some of the cocktail mixture. Serve immediately.
  • Step 2
    To serve this hot. Remove shrimp from the mixture after marinating. Heat mixture in a small sauce pan over medium heat then add the shrimp long enough to heat through and serve right away. The shrimp are pre-cooked so dont allow to sit in the hot mixture too long. Serve over white or spanish style rice for a healthy main dish.
