Ingredients
- 1 pound dried red chiles
- 2 cloves garlic, chopped fine
- 2 large onion, chopped fine
- 2 tablespoons lard or cooking oil
- 2 tablespoons flour
- 1 can tomato sauce
- 1 tablespoon salt
- 1 tablespoon ground oregano
- 2 cups water
How To Make chile sauce, red (sallye)

Step 1Remove stems and seeds from chiles. Place in heavy saucepan and cover with water. Boil for 30 minutes at medium low temperature Remove from heat Puree in food processor or blender until smooth and set aside

Step 2Add lard to heavy skillet and saute onions and garlic until translucent. Add flour and stir to make a smooth paste Add red chili pulp to flour mixture and stir to blend

Step 3Add salt, oregano and toomato sauce Simmer for 1/2 hour on low heat.

Step 4Store in airtight jar in refrigerator.
