pineapple, tomato and pepper salsa

I found some wild caught turbot at Trader Joe's last week and decided to have it for our Easter Saturday lunch. I'm going to serve this with the fish. This salsa is so pretty. It is crisp and delicious. Turbot is quite mild so this will give the whole dish a bit of ZING!

Ingredients

  • 1 medium ripe pineapple, rind removed, diced
  • 3 medium roma tomatoes, seeds removed, diced
  • 1/2 medium sweet onion, diced
  • 1/2 medium sweet bell pepper, diced
  • 1 teaspoon dried cilantro or 1 tbsp. fresh
  • 1 tablespoon lime juice
  • 1 pinch cayenne pepper
  • 1/4 teaspoon chipotle seasoning
  • 1/4 teaspoon adobo seasoning
  • 1/4 teaspoon course sea salt

How To Make pineapple, tomato and pepper salsa

  • Step 1
    Prepare the pineapple, tomato and onion. Put in a medium sized bowl. Add the cilantro, lime juice, seasonings and sea salt. Give it a mix to coat and let sit for 1 to 24 hours to allow the flavors to combine. Put on fish or meat or use in a tortilla if desired. Enjoy
