Ingredients
- 2 cups tomatoes, fresh if possible, seeded and diced (if canned, drain)
- 1/2 cup chopped onion
- 2-3 cloves garlic, microplaned or very finely diced
- 1/2 cup chopped cilantro, (fresh only)
- 1-2 - jalapenos, chopped finely, remove seeds and membranes as you desire
- 1 teaspoon salt and pepper to taste
- 1/2 teaspoon cumin
- 1/2 - lime, juiced and zest of 1/2 of the lime as well
- 1 tablespoon e virgin olive oil

Step 1Seed and dice tomatoes or drain if using canned (save juice for spaghetti sauce!)

Step 2Add all the rest of the ingredients.

Step 3marinate for a couple of hours if you can at room temperature.
