my version of tomatillo sauce

This sauce is so versatile -- it can be used on enchiladas, tacos or used as a dip with chips.

Ingredients

  • 4 tomatillos, washed and peeled
  • 1 chipotle pepper, canned packed in adobo sauce (or pepper of your choice)
  • 1 medium onion, cut into a rough chop
  • 3 cloves garlic
  • 1 teaspoon sugar or honey (or to taste)
  • 1/4 bunch cilantro, chopped
  • salt & pepper to taste

How To Make my version of tomatillo sauce

  • Step 1
    Place the tomatillos, chipotle and onions in water and bring to a boil for 5 minutes until soft and tender.
  • Step 2
    Drain water and place all ingredients in a blender. Blend well and then adjust seasonings.
  • Step 3
    This sauce can be used on enchiladas, tacos or served with chips
