When it comes to salsa I just can't get enough variety. I want to try every recipe I come across! When I saw this recipe had pineapple in it, I was intrigued. And rightfully so! The mango and pineapple add a delicious citrus-y sweetness to the spicy jalapenos. It was perfect served alongside a fillet of baked orange roughy.

Ingredients

    pineapple, fresh diced

    mango, fresh diced

    onion, chopped fine

    jalapeno pepper, seeded & finely chopped

    cilantro, fresh chopped
  • 1/4 c
    flat leaf parsley, fresh chopped

    limes, juiced
  • 2
    zest of lime
  • 1/4 c
    olive oil, extra virgin

How to Make Mango Pineapple Salsa

Step-by-Step

  1. Place first 6 ingredients in bowl.
  2. Add the juice from the limes, lime zest, and mix thoroughly.
  3. Stir in the EVOO until thoroughly mixed.
