This recipe has many names. Texas Caviar is one....but my friend's know it as Karen's special salsa. It is very different but OH so good! Put it out at your next gathering and it will be gone in a heartbeat.

Ingredients
- 3/4 cup apple cider vinegar
- 1 tablespoon water
- 1/4 cup olive oil
- 1 tablespoon salt
- 1/2 teaspoon pepper
- 1 cup sugar
- 1 can pinto beans, rinsed and drained
- 2 cans black-eyed peas, rinsed and drained
- 1 can shoe peg corn
- 1 medium red onion, chopped
- 1 medium green pepper, chopped
- 1 medium red or yellow pepper, chopped
- 1 jar pimiento, chopped
How To Make karen's special salsa

Step 1Boil the vinegar, water, olive oil, salt, pepper, and sugar on the stove and cool.

Step 2Rinse and drain the pinto beans, black eyed peas, and corn. Add the onion, peppers and pimiento.

Step 3Pour the sauce that was cooked on the stove over all the ingredients and marinate overnight in refrigerator. Enjoy!
