This recipe has many names. Texas Caviar is one....but my friend's know it as Karen's special salsa. It is very different but OH so good! Put it out at your next gathering and it will be gone in a heartbeat.

Ingredients For karen's special salsa

  • 3/4 c
    apple cider vinegar
  • 1 Tbsp
    water
  • 1/4 c
    olive oil
  • 1 Tbsp
    salt
  • 1/2 tsp
    pepper
  • 1 c
    sugar
  • 1 can
    pinto beans, rinsed and drained
  • 2 can
    black-eyed peas, rinsed and drained
  • 1 can
    shoe peg corn
  • 1 md
    red onion, chopped
  • 1 md
    green pepper, chopped
  • 1 md
    red or yellow pepper, chopped
  • 1 jar
    pimiento, chopped

How To Make karen's special salsa

  • 1
    Boil the vinegar, water, olive oil, salt, pepper, and sugar on the stove and cool.

    Rinse and drain the pinto beans, black eyed peas, and corn. Add the onion, peppers and pimiento.
  • 3
    Pour the sauce that was cooked on the stove over all the ingredients and marinate overnight in refrigerator. Enjoy!
