kachumber (north indian "salsa")

Served as a salad in Northern India, but can be used as a salsa, with chips. If you don't want the "heat", remove seeds from chilis before dicing. It is best to chop and dice everything by hand, as a food processor will turn it all to mush.

Ingredients

  • 1 large red onion, peeled and diced
  • 4 medium tomatoes, diced
  • 4 medium cucumbers, peeled and diced
  • 1-3 - fresh serrano chilis, stems removed, and finely diced
  • 2 - limes (juice of)
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon salt
  • 1 teaspoon chili powder

  • Step 1
    In a large bowl, mix all ingredients and serve immediately. Refrigerate leftovers and use within 1 day.
