Ingredients

    medium (about 3/4 pds.) ripe peaches, peeled and
  • 2
    medium (about 3/4 pds.) ripe tomatoes, chopped
  • 1
    bulb fennel, trimmed, cored and chopped
  • 1/ c
    finely chopped red onion
  • 3 Tbsp
    olive oil
  • 1 Tbsp
    fresh lemon juice
  • 1/2 tsp
    fennel seeds, crushed
  • 1/2 tsp
    sea salt
  • 1/8 - 1/4 tsp
    ground red pepper

How to Make Jen's Peach Salsa

Step-by-Step

  1. In medium bowl, stir in all ingredients.

    Cover and refrigerate if not serving right away.

    serve with some nice nacho chips, pita chips or bread.
