jam essentials: spicy tomato topper
Put this together yesterday. It similar to a topping you might find on Spanish tapas, but with some different ingredients. I use it for appetizers, Hor d’ oeuvres, burgers, or to top a meatloaf. Experiment… Have fun. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 14 ounces diced tomatoes, 1 can, including juice
- 1 tablespoon granulated sugar
- 1 tablespoon rice vinegar, or plain white vinegar
- 1 teaspoon tomato paste
- 1 teaspoon red pepper flakes, or to taste
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cumin
- 1 tablespoon lemon juice, freshly squeezed

Step 2You will need a small saucepan to make this recipe

Step 3Gather your ingredients (mise en place).

Step 4Add all of the ingredients, except the lemon juice to a small saucepan, over medium-low heat.

Step 5Allow to slowly simmer until it begins to thicken.

Step 6Depending your definition of “simmer” the process could take from 1 – 2 hours. Just make sure it is low-and-slow.

Step 7Add the lemon juice and do a final tasting for proper seasoning.

Step 9Idea #1: Soften some cream cheese, add a few spices (salt, pepper, cumin, etc.), mix in a bit of breadcrumbs for crunch, place on a tasting spoon, and top with some tomato topper. Idea #2: Same as Idea $1, except serve on toast points or crackers. Idea #3: Use it to top a meatloaf, or burger. Have fun with it. Enjoy.
