I got this recipe from Taste of Home, but made a few changes to suit our own tastes...
It's really good, light and refreshing...made it today & then made my own chips from flour tortillas, wedged & baked w/cinnamon sugar...yummy!
This is more like a dessert!
Hope you all will try it and enjoy it as much as I do!

4 tsp
white vinegar
1 can(s)
(11 oz.) mandarin oranges
1 can(s)
(8.5 oz.) sliced peaches
1 c
pineapple tidbits
1 small
finely chopped onion
1/2 c
diced green pepper
1/2 c
diced sweet red pepper
1/2 c
diced yellow pepper
1/2 tsp
minced garlic (jar type)
tortilla chips


1Combine cornstarch and vinegar in 3-1/2 to 4 qt. crockpot. Stir in fruits (do not drain) and vegetables, mixing well.
2Cover, cook on "High" for 2-3 hrs, or until thickened. Stir occasionally.
3Serve with tortilla chips.
4Note: I make my own from flour tortillas, cut in wedges and baked. This time, I sprayed chips with cooking spray and sprinkled with mixture of cinnamon and sugar; Bake @ 400°F for about 10 minutes. Your oven may be different, so keep check on them!
