It's really good, light and refreshing...made it today & then made my own chips from flour tortillas, wedged & baked w/cinnamon sugar...yummy!
This is more like a dessert!

4 tspwhite vinegar
1 can(s)(11 oz.) mandarin oranges
1 can(s)(8.5 oz.) sliced peaches
1 cpineapple tidbits
1 smallfinely chopped onion
1/2 cdiced green pepper
1/2 cdiced sweet red pepper
1/2 cdiced yellow pepper
1/2 tspminced garlic (jar type)
How to Make FRUIT SALSA
- Combine cornstarch and vinegar in 3-1/2 to 4 qt. crockpot. Stir in fruits (do not drain) and vegetables, mixing well.
- Cover, cook on "High" for 2-3 hrs, or until thickened. Stir occasionally.
- Serve with tortilla chips.
- Note: I make my own from flour tortillas, cut in wedges and baked. This time, I sprayed chips with cooking spray and sprinkled with mixture of cinnamon and sugar; Bake @ 400°F for about 10 minutes. Your oven may be different, so keep check on them!
