I got this recipe from Taste of Home, but made a few changes to suit our own tastes... It's really good, light and refreshing...made it today & then made my own chips from flour tortillas, wedged & baked w/cinnamon sugar...yummy! This is more like a dessert! Hope you all will try it and enjoy it as much as I do!

Ingredients

  • 3 tablespoons cornstarch
  • 4 teaspoons white vinegar
  • 1 can (11 oz.) mandarin oranges
  • 1 can (8.5 oz.) sliced peaches
  • 1 cup pineapple tidbits
  • 1 small finely chopped onion
  • 1/2 cup diced green pepper
  • 1/2 cup diced sweet red pepper
  • 1/2 cup diced yellow pepper
  • 1/2 teaspoon minced garlic (jar type)
  • - tortilla chips

How To Make fruit salsa

  • Step 1
    Combine cornstarch and vinegar in 3-1/2 to 4 qt. crockpot. Stir in fruits (do not drain) and vegetables, mixing well.
  • Step 2
    Cover, cook on "High" for 2-3 hrs, or until thickened. Stir occasionally.
  • Step 3
    Serve with tortilla chips.
  • Step 4
    Note: I make my own from flour tortillas, cut in wedges and baked. This time, I sprayed chips with cooking spray and sprinkled with mixture of cinnamon and sugar; Bake @ 400°F for about 10 minutes. Your oven may be different, so keep check on them!
