Ingredients

fresh corn kernels, cooked

ripe papaya, peeled, seeded and cut into 1/4" pieces
1/3 c
red onion, finely chopped

ripe plum tomatoes, seeded, finely diced
1.5 tsp
garlic, finely minced
1 Tbsp
freshly grated lime zest
1/4 c
fresh lime juice
1/3 c
chopped fresh cilantro

Step-by-Step

  • 1In a large bowl, combine all ingredients except cilantro.
  • 2Toss together.
  • 3Refrigerate, covered, for up to 2 hours.
  • 4Just before serving, toss with cilantro.
