Ingredients

  • 1 cup fresh corn kernels, cooked
  • 1 - ripe papaya, peeled, seeded and cut into 1/4" pieces
  • 1/3 cup red onion, finely chopped
  • 2 - ripe plum tomatoes, seeded, finely diced
  • 1.5 teaspoons garlic, finely minced
  • 1 tablespoon freshly grated lime zest
  • 1/4 cup fresh lime juice
  • 1/3 cup chopped fresh cilantro

How To Make festival corn salsa

  • Step 1
    In a large bowl, combine all ingredients except cilantro.
  • Step 2
    Toss together.
  • Step 3
    Refrigerate, covered, for up to 2 hours.
  • Step 4
    Just before serving, toss with cilantro.
