eddie's homemade tomato juice
This recipe was my Mothers. If you like spicy tomato juice, you might like this. Add 2 Jalapeno peppers without the seeds and vains. I think you will love it. Also good on meatloaf.

Makes 3 to 4 quarts
Ingredients
- 2 quarts tomatoes chopped
- 1 cup water
- 1 - bay leaf
- 2 small onions chopped
- 2 stalks celery chopped
- 1 teaspoon salt
- 2 tablespoons sugar
- 1/4 teaspoon pepper
- 2 tablespoons lemon juice
- 2 tablespoons vinegar
- 2 - jalapeno peppers seeded and vained ( op)
How To Make eddie's homemade tomato juice

Step 1Simmer all ingredients except lemon juice and vinegar. 1 hour.

Step 2Put through strainer allowing some pulp through. Add lemon juice and vinegar heat to boiling

Step 3Ladle hot tomato juice into clean jars, leaving 1/4 inch head space. Wipe off rim of jars with clean paper towel

Step 4Put on lids and rings , adjust. Lower jars into boiling water to cover jars. When water returns to a boil begin timing 15 minutes.

Step 5Let set for 24 hours.
