This is delicious and easy to make. I love the corn salsa from Trader Joe's, but since we don't have one very close, I always run out before I'm able to restock. This is my attempt at making something to get me by until I can get more. It's not just like TJ's, but pretty darn good! We love this on tacos(especially fish tacos) or for dipping tortilla chips.

Ingredients

  • 2 cups fresh or frozen(thawed) corn(if using frozen, i use the super sweet)
  • 1/2 cup chopped red onion*
  • 1/2 cup chopped red sweet pepper
  • 2 tablespoons minced fresh cilantro or parsley
  • - pinch of salt
  • - generous pinch of coarsly ground black pepper
  • - juice of half a lime(optional)

How To Make corn salsa

  • Step 1
    Add all ingredients to a bowl and toss to combine. Cover and refrigerate.(The longer you refrigerate before use, the better the flavors meld. If you don't have time, it can be eaten immediately, though.)
  • Step 2
    *I like to sweat the onions in a bit of olive oil before adding to the rest of the ingredients. It makes the flavor more mellow. If you like a stronger, raw onion flavor, this is not necessary. To do, just add the onions to a small skillet with a couple teaspoons of oil that has been heated over medium heat. Cook and stir for 2-4 min. til onions are looking softer and translucent. You don't want to brown or carmelize them, just soften and mellow them.
