Ingredients
- 1 cup fresh corn kernels
- 1/4 cup red bell pepper, chopped
- 1/4 cup yellow bell pepper, chopped
- 1/4 cup diced tomatoes
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons lemon juice
- 1 tablespoon finely chopped green onion
- 1/2 - jalapeno chili, minced
- 1 cup peeled, diced avocado
How To Make avocada-corn salsa

Step 1Cook corn until tender, drain and cool. Transfer to medium bowl. Add remaining ingredients, except avocado and toss gently. Mix diced avocado into salsa. Season to taste with salt and pepper. Makes 2 1/3 cups.
