tammy's cream cheese frosting
This classic frosting is the perfect complement to carrot, apple-nut and spice cakes. To soften cream cheese in the microwave, place unwrapped packages on a plate; microwave on medium for 1 to 1-1/2 minutes or until softened. This is enough frosting to frost a 3 layer cake, or 15"x10" or 13"x9" pan or Bundt cake pan.

- 2 packages (3-ozs) each cream cheese, softened
- 1 teaspoon vanilla extract
- 3 cups confectioners' sugar (powdered sugar)
